Georgian bean salad

Drain and rinse:
1 19 oz can red kidney beans
Then pour into medium bowl.

Mix together in small bowl:
1/3 c.  Jackie's Plum jam
2 T red wine vinegar
1 T fresh lemon or lime juice
1/2 small fresh chili pepper like Serrano or jalapeno, seeded and minced
1 clove garlic, pressed or minced
1/2 t salt
1/4 t ground coriander
ground black pepper to taste
1 to 2 T minced fresh cilantro

Stir well, taste for seasoning, then pour over the beans and stir to mix
well. Serve at room temperature.

Malva Pudding

Ingredients:

3/4 c sugar
2 large eggs
1T Jackie's apricot jam
1/2 c flour
1 t baking soda
1/2t salt
1T butter
1t vinegar
1/3 c milk

Sauce ingredients:
3/4 c cream
3 T butter
1/2 c sugar
1/3 c hot water
1t vanilla

Preheat oven to 350 deg. Beat the sugar and eggs, in food processor or
by hand, until thick and lemon colored.  Then add the apricot jam and
beat thoroughly.
 
Whisk together flour, soda and salt.  Melt butter and add to it the
vinegar.  Pour the butter mixture with the milk into the egg mixture
alternating with the flour. Beat well.

Pour into 8X8 baking pan sprayed with baking spray (Pam) and bake for
about 25 min. Meanwhile, melt the butter and the rest of the sauce
ingredients in a sauce pan.   Remove the cake from the oven and poke
holes in it with the small end of a chop stick.  Pour the sauce over it
and return to the oven to bake for another 20 to 25 minutes.


Thumbprint Cookies

¾ C. Butter or Margarine
1 (3oz) Pkg. Cream Cheese
2 C. Sifted Flour
1 Egg Beaten Slightly
2 Tblsp. Sugar
½ Tsp. Salt
1/4 Tsp. Salt
¼ Tsp. Baking Powder
½ C. Jackie’s Triple Berry Jam (Or Mango Raspberry, Strawberry, Plum)

  • Cream Together Butter and Cream Cheese until Lightly Fluffy  
  • Sift Together Flour, Sugar, Salt and Baking Powder
  • Stir into Creamed Mixture, Blending Thoroughly
  • Roll out on Lightly Floured Surface into a Square about ½ Inch Thick. Cut into 1 ½ Squares
  • Place on Un-greased Baking Sheet. With Your Thumb Make an Indentation in Center of Each Cookie. Fill with ½ Tsp Jam.
  • Bake at 350 Degrees, 20-25 Minutes. Makes 2 ½ Dozen Cookies

Pork Chop Marinate

Ginger, Jackie’s Plum or Mango Raspberry Jam, Garlic, Soy Sauce, and Worchester Sauce.  Mix together and marinate Pork before cooking.


Butternut Squash 

Mix Jackie’s Peach Jam with Cinnamon and butter and spread on squash before cooking


Spanish Salad

Mix Spinach with goat cheese, toasted pine nuts, and sliced strawberries.

Dressing made with Jackie’s Strawberry or Mango Raspberry Jam, orange juice, balsamic vinegar, and a little oil.  


Robert’s Zippy Salmon

2 pieces of fresh salmon
2 Tablespoons of lemon juice
2 tablespoons of butter or margarine
2 tablespoons of Jackie’s Zippy Jalapeno Jam

Place salmon on a plate and season with lemon juice and butter or margarine.

Cook in microwave for 2 minutes.

Take out and spread salmon with Jackie’s zippy jalapeno jam and put back into microwave for 1 minute.

Enjoy!!


Fruit Bars

3/4 Cup Butter
1 Cup Sugar
1 Egg
1 Teaspoon Vanilla
2 Cups + 1 Teaspoon Flour
1 1/3 Cups Flaked Coconut
½ Cup Chopped Walnuts
1/4 Teaspoon Salt
1 Jar Jackie’s Apricot, Triple Berry or Mango Raspberry

In a bowl of electric mixer cream together butter and sugar. Add egg and vanilla and mix to combine. Stir in flour, coconut, walnuts and salt

Press half the dough into a well greased 8 or 9 inch pan. Spread with preserves.

Crumble remaining dough on top and press down lightly. Bake at 350


Ham & Pineapple Kebobs

 ¼ cup Jackie’s Peach Ambrosia Jam
2 Tablespoons Vegetable Oil
4 teaspoons Dijon Mustard
1 Tablespoon Lemon Juice
1 8-10 oz Ham Steak cut into 1 inch pieces
1 can Pineapple chunks

Preheat BBQ to Med High

Whisk Jam, oil, mustard, and lemon juice in small bowl to blend
Alternate ham pieces and pineapple chunks on skewers
Brush with jam glaze and sprinkle with pepper
Grill until ham is slightly charred, turning often and brushing on more glaze


Nachos

½ pound lean ground beef
½ cup Jackie’s orange marmalade or zippy Jalapeno Jam
¼ cup finely chopped green olives
1 cup taco sauce
1 ( 4.5oz) can diced jalapenos
2 Tablespoons chili powder
2 cups shredded cheddar cheese

Cook beef over medium heat until browned.  Drain
Stir marmalade, taco sauce, olives, jalapenos, and chili powder.  Mix well
Gently stir in cheese, heat on medium low  temp.
Keep warm to serve as a dip or on top of chips

Jonah's PBJJ Sandwich
 
Ingredients  Bread, Peanut Butter, Jackie's TripleBerry Jam
 
Spread the Peanut Butter thinly on both side of the bread( that way the jam does not leak through!) Next, spread a generous amount of Jackie's TripleBerry jam on top of one slice of bread.  Close the breads slices together and enjoy!!!
