PUMPKIN SPICE EGGNOG

The signature seasonal beverage, eggnog, spiced up à la Jackie! Pumpkin spiced eggnog is a creamy, holiday-inspired drink that combines the flavors of pumpkin, spices, and traditional eggnog. Here are two recipes: an easy one and a gourmet one to enjoy with or without rum, hot or cold, but don’t forget the whip!

INGREDIENTS

Eggnog - very easy

INSTRUCTIONS
Mix 1/2 jar of Jackie's Pumpkin Butter Jam and eggnog in a blender and serve! It's that easy!

Here’s one that takes a little more effort:

Ingredients:

  • 2 cups of whole milk

  • 1/2 cup of heavy cream

  • 1/2 jar of Jackie's Jams Pumpkin Butter

  • 1/2 cup of sugar

  • 3 eggs

  • 1 teaspoon of pumpkin pie spice (or a mixture of cinnamon, nutmeg, and allspice)

  • 1/2 teaspoon of vanilla extract

  • Pinch of salt

  • Nutmeg for topping (optional)

Instructions:

  1. In a saucepan, heat the milk, cream, Jackie’s Pumpkin Butter, sugar, pumpkin pie spice, vanilla extract, and salt until steaming.

  2. In a separate bowl, beat the eggs until light and frothy.

  3. Slowly add a cup of the hot milk mixture to the eggs, whisking constantly.

  4. Pour the egg mixture back into the saucepan with the remaining milk mixture.

  5. Cook over low heat, stirring constantly, until the mixture thickens slightly, about 5 to 7 minutes. Do not let the mixture boil.

  6. Remove from heat and let cool to room temperature.

  7. Refrigerate until chilled, about 2 hours.

    If desired, add an ounce of rum and serve in glasses garnished with a sprinkle of nutmeg and/or cinnamon stick…and don’t forget to top with whipped cream!
